Three ways to set an oven
Recipes from different places quote oven heat differently: degrees Celsius, degrees Fahrenheit, or a gas mark. This converter takes any one of them and shows the other two, plus a quick description of how hot that is.
°F = °C × 9/5 + 32 · gas mark ≈ one step per 14°C
Gas marks do not map exactly onto round Celsius numbers, so the converter snaps to the nearest standard mark. For baking, getting within a mark is usually close enough — ovens vary more than that between models anyway.
180°C converts to 356°F, or gas mark 4 — a moderate oven, the standard setting for many cakes and roasts.
Getting the heat right
Oven temperature is one of the biggest factors in how a dish turns out, yet dials are rarely precise and ovens often run hot or cold. Converting confidently between scales means you can follow any recipe, wherever it is from.
Handy to know
- Fan runs hotter. Drop about 20°C, or one gas mark, for a fan oven.
- Use an oven thermometer. Many ovens are off by 10–20°C from the dial.
- Preheat fully. Especially for baking, where the starting heat sets the rise.
